Cheesy Grits Casserole

Singing while you make this may enhance the final flavor :). If you’ve got a crowd, the recipe is easily doubled and baked in a 9″x13″ pan.

Preheat oven to 325 degrees. Grease an 8″x8″ pan.

  • 3 c boiling water
  • 1 tsp Diamond kosher salt
  • 3/4 c white or yellow grits (regular or quick-cooking; definitely NOT instant grits)
  • 1/4 c butter (2 oz)
  • 1 1/2 c of grated cheddar cheese (or revert to the original recipe and use 8 oz of Velveeta cheese)
  • 2 big dashes of Tabasco
  • 2 beaten eggs

Add the grits slowly to the boiling water, stirring constantly, and then add the salt. Cook – and stir – until thick – about 3-5 minutes. Stir the butter, cheese, and Tabasco into the grits and mix well. Then very slowly add the beaten eggs into the grits, stirring constantly. Pour the grits into the greased pan and bake for 50 minutes. Cool for about 15 minutes and then cut into squares to serve. Enjoy.
