Peanut-y Asian Slaw

Peanut-y Dressing

  • 1/4 c creamy peanut butter
  • 1/4 c seasoned rice vinegar
  • 1 T soy sauce
  • 1 T honey
  • 2 tsp sesame oil
  • 2 T peanut oil


  • 2-3 carrots, shredded with a vegetable peeler into about 2″ lengths
  • 3 scallions (green onions), thinly sliced, green parts included
  • 1/2 c thinly sliced red bell pepper
  • 1/2 c cucumbers, thinly sliced
  • 1/2 c coarsely chopped cilantro
  • 2 c shredded packed kale

Combine all of the dressing ingredients and whisk until smooth (or put them in a blender). ¬†Combine all of the salad ingredients in a serving bowl and toss gently. ¬†When you’re ready to serve the salad/slaw, toss the salad ingredients with the dressing to taste.
