Peanut-y Asian Slaw
Ingredients
Peanut-y Dressing
- 1/4 c creamy peanut butter
- 1/4 c seasoned rice vinegar
- 1 T soy sauce
- 1 T honey
- 2 tsp sesame oil
- 2 T peanut oil
Salad
- 2-3 carrots, shredded with a vegetable peeler into about 2″ lengths
- 3 scallions (green onions), thinly sliced, green parts included
- 1/2 c thinly sliced red bell pepper
- 1/2 c cucumbers, thinly sliced
- 1/2 c coarsely chopped cilantro
- 2 c shredded packed kale
Combine all of the dressing ingredients and whisk until smooth (or put them in a blender). Combine all of the salad ingredients in a serving bowl and toss gently. When you’re ready to serve the salad/slaw, toss the salad ingredients with the dressing to taste.
